			<content:encoded><![CDATA[<p>Whether you have a mild sensitivity or full-blown Celiac disease, many people have found it beneficial to eliminate gluten from their diets, but not all those living a gluten free lifestyle are doing so out of necessity.  Going gluten free is growing in popularity as a voluntary dietary restriction, and many people are seeing a broad scope of health benefits as a result.</p>
<p>Aside from food allergies, eliminating gluten from the diet has been shown to benefit those suffering from thyroid disease, cystic fibrosis, multiple sclerosis, anemia, and even autism, while increasing the body&#8217;s energy levels, lowering cholesterol and improving overall digestive functions. It has also been shown to cause significant weight loss in a large percentage of people.</p>
<p>Gluten is a current staple of the average American&#8217;s diet and can be found in most grains including rye, oats, wheat, malt and barley, so going gluten free usually brings on a complete re-evaluate of a person&#8217;s eating habits. As a result, those observing a gluten free lifestyle tend to consume more fresh and organic foods and less sugar and fat.  They also tend to make more meals from scratch and experiment with a wider range of food choices.</p>
